Ingredients

  • 200 g ground chicken breast
  • 200 g raw shrimp, minced

  • 1 tbsp soy sauce (for filling)

  • 1 large head bok choy, quartered lengthwise
  • 2 tbsp sesame paste (or tahini)
  • 1 tbsp chili oil
  • 1 tsp rice vinegar
  • 1 tsp soy sauce (for drizzle)
  • 0.5 tsp granulated sugar
  • 0.2 inch piece fresh ginger, grated (for drizzle)
  • 2 tbsp hot vegetable broth (for drizzle)
  • Cilantro leaves and roasted sesame seeds, for garnish

Instructions

  1. Prepare Wonton Filling: Combine ground chicken, minced shrimp, grated ginger, minced garlic, white parts of spring onions, 1 tbsp soy sauce, 1 tsp sesame oil, and white pepper in a bowl. Mix gently until combined.
  2. Fold Wontons: Place a small amount of filling on a wonton wrapper. Moisten edges with water, then fold into a triangle shape, pressing out air and sealing corners tightly. Repeat for all wrappers.
  3. Prepare Broth: Bring 6 cups of broth to a simmer in a large pot. Add extra ginger slices and most of the green spring onion parts. Season with 1 tsp soy sauce and 0.5 tsp sesame oil.
  4. Make Spicy Sesame Chili Drizzle: In a separate bowl, whisk together sesame paste, chili oil, rice vinegar, soy sauce, sugar, minced garlic, and grated ginger. Gradually add hot broth while whisking vigorously until smooth and emulsified.
  5. Cook Noodles and Wontons: Cook noodles in a separate boiling pot according to package directions; drain and set aside. Add wontons and bok choy to the simmering broth; cook gently for 3-5 minutes or until wontons float and are cooked through.
  6. Assemble and Serve: Divide cooked noodles and bok choy among serving bowls. Ladle broth over top and arrange wontons. Drizzle generously with spicy sesame chili sauce; garnish with cilantro and sesame seeds.
