- 200 g ground chicken breast
- 200 g raw shrimp, minced

- 0.5 tsp granulated sugar
- 0.2 inch piece fresh ginger, grated (for drizzle)
- 2 tbsp hot vegetable broth (for drizzle)
- Cilantro leaves and roasted sesame seeds, for garnish
Instructions
- Prepare Wonton Filling: Combine ground chicken, minced shrimp, grated ginger, minced garlic, white parts of spring onions, 1 tbsp soy sauce, 1 tsp sesame oil, and white pepper in a bowl. Mix gently until combined.
- Fold Wontons: Place a small amount of filling on a wonton wrapper. Moisten edges with water, then fold into a triangle shape, pressing out air and sealing corners tightly. Repeat for all wrappers.
- Prepare Broth: Bring 6 cups of broth to a simmer in a large pot. Add extra ginger slices and most of the green spring onion parts. Season with 1 tsp soy sauce and 0.5 tsp sesame oil.
- Make Spicy Sesame Chili Drizzle: In a separate bowl, whisk together sesame paste, chili oil, rice vinegar, soy sauce, sugar, minced garlic, and grated ginger. Gradually add hot broth while whisking vigorously until smooth and emulsified.
- Cook Noodles and Wontons: Cook noodles in a separate boiling pot according to package directions; drain and set aside. Add wontons and bok choy to the simmering broth; cook gently for 3-5 minutes or until wontons float and are cooked through.
- Assemble and Serve: Divide cooked noodles and bok choy among serving bowls. Ladle broth over top and arrange wontons. Drizzle generously with spicy sesame chili sauce; garnish with cilantro and sesame seeds.
