  • 0.5 tsp freshly ground black pepper

Instructions

  1. Prep The Chicken: Pat the whole chicken extremely dry with paper towels. Remove any giblets from the cavity. Place the bird in a sturdy roasting pan.
  2. Mix Turmeric Crust: In a small bowl, combine 2 tablespoons olive oil, 1 tablespoon ground turmeric, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon paprika, 1 teaspoon salt, and 0.5 teaspoon black pepper. Mix until it forms a thick, vibrant paste.
  3. Apply The Crust: Rub the golden turmeric crust paste all over the chicken, making sure to get under the skin of the breast and thighs for maximum flavor and moisture. Stuff the cavity with lemon halves and fresh herbs (rosemary, thyme) if using.
  4. Preheat And Roast: Preheat your oven to 400°F (200°C). Roast the chicken for 15 minutes, then reduce the heat to 375°F (190°C). Continue roasting until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh, which usually takes about 60-90 minutes. If the skin starts to brown too quickly, lightly tent the chicken with foil to prevent burning.
