Description

This family-friendly vanilla bean frappuccino recipe features a homemade raspberry rose swirl for an elegant twist. It’s coffee-free and results in a thick, creamy texture perfect for a hot afternoon treat.

Ingredients

  • 100 g fresh or frozen raspberries
  • 20 g granulated sugar (for swirl)
  • 30 ml water
  • 2.5 ml alcohol-free rose water
  • 300 g ice cubes
  • 180 ml full-fat milk
  • 10 g vanilla bean paste
  • 30 g granulated sugar (for frappuccino base)
  • 1 g xanthan gum (optional)
  • 120 ml cold heavy cream (36% fat+)
  • 10 g powdered sugar
  • 1.25 ml alcohol-free vanilla extract
  • 34 fresh raspberries (for garnish)

Instructions

  1. Prepare Raspberry Rose Swirl: Combine raspberries, 20g granulated sugar, and water in a small saucepan. Simmer over medium heat for 5-7 minutes, stirring until berries break down. Strain through a fine-mesh sieve to remove seeds; stir in rose water and chill for at least 15 minutes.
  2. Make Vanilla Whipped Cream: Whip heavy cream, powdered sugar, and vanilla extract in a medium bowl on medium-high speed until soft peaks form, approximately 2-3 minutes. Refrigerate immediately.
  3. Blend Frappuccino Base: Add ice cubes, milk, vanilla bean paste, 30g granulated sugar, and xanthan gum (if using) to a high-speed blender. Blend until completely smooth and thick, scraping down sides as necessary. Ensure no ice chunks remain.
  4. Assemble and Serve: Smear a generous amount of raspberry swirl up the inner walls of a tall glass. Pour the blended frappuccino base into the glass, top with vanilla whipped cream, drizzle with remaining swirl, and garnish with fresh raspberries before serving immediately.

Notes

Xanthan gum is the key ingredient for preventing separation and creating a perfectly thick texture. For an even richer base, substitute frozen milk cubes for regular ice cubes. To make this recipe ahead for a group, prepare the swirl up to 3 days in advance, and the whipped cream up to 2 hours in advance; do not blend the frappuccino base until ready to serve.
