Description

  • 12.5 oz Corn Chex cereal
  • 7 oz small pretzel twists

  • 2 tsp alcohol-free vanilla extract
  • 1/4 cup crushed freeze-dried raspberries, divided
  • 2 tsp beetroot powder

Instructions

  1. Prep Ingredients and Oven: Preheat oven to 275°F (135°C) and line two large baking sheets with parchment paper. In a large heatproof bowl, combine the Rice Chex, Corn Chex, and pretzels.
  2. Prepare White Chocolate Coating Base: Melt the butter in a microwave-safe bowl. Add 3.5 oz (100g) of the white chocolate chips and microwave in 30-second intervals until smooth. Stir in the powdered sugar and vanilla extract.
  3. Coat Cereal Mix Evenly: Pour the white chocolate mixture over the cereal and pretzels. Fold gently with a spatula until everything is evenly coated. Spread the mix onto the prepared baking sheets in a single layer.
  4. Make Ruby Raspberry Swirl: In a separate small microwave-safe bowl, melt the remaining 3.5 oz (100g) white chocolate chips with 2 tbsp of the crushed freeze-dried raspberries and the beetroot powder until smooth.
  5. Drizzle and Swirl: Drizzle the ruby raspberry chocolate over the coated cereal on the baking sheets. Gently fold and swirl the mixture a few times to create a marbled pattern, avoiding overmixing.
  6. Bake until Crisp: Bake for 50-60 minutes, stirring gently every 15 minutes, until the mix is lightly golden and crisp. Cool completely on wire racks, where it will further crisp up.
  7. Finish and Serve: Break apart any clusters. Dust with extra powdered sugar and scatter the remaining 2 tbsp crushed freeze-dried raspberries over the top for serving.

Notes

To achieve a clear marbled pattern, avoid overmixing the red swirl into the white base coating. If the base coating has cooled completely before adding the swirl, reheat it for a minute or two in the oven to soften it slightly.
