Description

This elegant upside down apple puff pastry features a flaky, buttery crust, tender caramelized apples, and a rich caramel base. It’s a quick and easy, family-friendly dessert perfect for a comforting treat on busy days.

Ingredients

  • 1 sheet puff pastry (from a 14.1 oz/400g package)
  • 23 medium apples (about 1.5 lbs/680g), crisp, firm varieties like Gala, Honeycrisp, or Granny Smith
  • 0.5 cup caramel sauce (120ml), store-bought or homemade
  • 2 tablespoons unsalted butter (28g)
  • 0.25 cup brown sugar (50g)
  • 1 teaspoon cinnamon (2g)

Instructions

  1. Prep Your Pan: Line a baking sheet with parchment paper. Melt 2 tablespoons butter directly on the parchment in the center, ensuring it spreads slightly.
  2. Make The Caramel Base: Sprinkle 0.25 cup brown sugar and 1 teaspoon cinnamon evenly over the melted butter. Drizzle 0.5 cup caramel sauce across this sugary butter layer.
  3. Arrange The Apples: Core and thinly slice 2-3 medium apples. Arrange the slices in a decorative spiral over the caramel mixture on your baking sheet.
  4. Place The Puff Pastry: Gently unfold one sheet of thawed puff pastry. Carefully lay it over the apples, tucking the edges neatly under the apple layer to seal.
  5. Bake To Golden Perfection: Bake in a preheated oven at 400°F (200°C) for 20-25 minutes, or until the pastry is beautifully puffed, deeply golden brown, and the edges are bubbling.
  6. The Grand Flip: Let the baked pastry cool for 5 minutes on the baking sheet. Then, carefully invert the pastry onto a serving plate.

Notes

For best results, use good quality all-butter puff pastry and crisp, unbruised apples. Ensure pastry is thawed but cold for optimal flakiness. For faster prep, use pre-sliced apples or a mandoline. If apples are not tender, slice thinner next time or cover with foil during baking. If caramel is too runny, it will thicken upon cooling; if still too thin, return to a low oven briefly. Ensure a generous butter and caramel base to prevent sticking.
