  • 1 Tbsp mirin
  • 1 tsp toasted sesame oil
  • 2 cloves garlic, minced
  • 1 inch ginger, grated

Instructions

  1. Prepare Broth: In a 4-quart pot, gently warm 6 cups of vegetable broth over medium heat (about 5 minutes). Stir in the 0.25 cup miso paste, 2 minced garlic cloves, and 1 inch grated ginger until the miso dissolves completely. Bring to a low simmer, avoiding a rolling boil; the broth should just be gently steaming.
  2. Cook Noodles: Add 8 oz udon noodles to the simmering miso broth. Cook according to package directions, usually 3-5 minutes, until they are tender and pliable.
  3. Add Protein And Greens: Stir in the cubed 14 oz firm tofu, 2 Tbsp soy sauce, and 1 Tbsp mirin. Just before serving, wilt in 5 oz fresh emerald spinach until it’s tender-crisp and vibrant green (about 1-2 minutes).
