Ingredients

  • 1 pound turkey Italian sausage (mild, hot, or sweet) – You can buy it pre-seasoned or make your own with a turkey Italian sausage seasoning recipe.
  • 1–2 tablespoons olive oil – Helps with browning and keeps the sausage moist.
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 red bell pepper, sliced
  • 1 small zucchini, sliced
  • 1 cup chopped kale
  • 8 ounces pasta (penne or ziti), 1 cup cooked rice, or 1 cup quinoa
  • ½ teaspoon red pepper flakes
  • 1 teaspoon Italian herb blend
  • ½ teaspoon crushed fennel seed
  • 1 cup shredded mozzarella
  • ¼ cup grated Parmesan

Instructions

  1. Prep ingredients: Chop vegetables, mince garlic, and measure spices before you start cooking.
  2. Brown sausage: Heat olive oil in a large skillet over medium heat. Add the turkey Italian sausage and cook until browned and fully cooked to 165°F, breaking it into crumbles.
  3. Add aromatics: Stir in garlic, onion, basil, and oregano. Cook 2–3 minutes until fragrant.
  4. Stir in vegetables: Add bell peppers, zucchini, and kale. Cook until just tender.
  5. Add sauce or broth: Stir in 1 cup marinara sauce or chicken broth, depending on your dish.
  6. Simmer: Reduce heat to low and let everything mingle for 10–12 minutes so the flavors blend.
  7. Finish with cheese: Sprinkle mozzarella and Parmesan over the top. Let melt before serving.
