  • 2 cans tuna, in water or oil, well-drained
  • 0.5 cup mayonnaise, regular, light, or avocado-based
  • 2 stalks celery, finely chopped
  • 0.25 small red onion, minced (optional)
  • 2 cups purple cabbage, finely shredded
  • 1 medium carrot, grated
  • 2 Tbsp apple cider vinegar
  • 1 tsp sugar, or maple syrup
  • 0.5 tsp salt, to taste
  • 0.25 tsp pepper, to taste
  • 4 slices bread, your favorite

Instructions

  1. Prepare The Slaw: In a medium bowl, combine 2 cups (180g) finely shredded purple cabbage and 1 medium (60g) grated carrot. Whisk 2 Tbsp (30ml) apple cider vinegar, 1 tsp (5g) sugar, salt, and pepper. Pour over cabbage, toss well until coated (its color deepens). Let sit for 5 minutes, allowing flavors to meld.
  2. Make The Tuna Salad: Drain 2 cans (280g) tuna thoroughly. In a bowl, flake tuna. Stir in 0.5 cup (120g) mayonnaise, 2 Tbsp (50g) chopped celery, and 1 Tbsp (30g) minced red onion (if using). Season to taste with salt and pepper, mixing until it looks creamy and well combined.
  3. Assemble Your Sandwich: Lightly toast 2 slices of your chosen bread if desired, until golden. Spread a generous layer of the tuna salad evenly on one slice of bread.
  4. Add The Slaw: Top tuna salad with 0.25 cup purple cabbage slaw, using a slotted spoon to drain liquid. If slaw seems too wet, pat gently with a paper towel.
