Ingredients
- 12 oz fresh or dried long pasta (fettuccine, tagliatelle, or pappardelle)
- 1–2 tsp high-quality truffle oil or truffle paste
- 4 Tbsp unsalted butter
- 0.5 cup freshly grated Parmesan cheese, plus extra for serving
- 4 large, fresh egg yolks
- 2 cloves garlic, minced
- 0.25 tsp freshly ground black pepper
- 0.5 tsp sea salt, or to taste
Instructions
- Prep Ingredients: Have all your ingredients measured and ready to go for a smooth cooking process.
- Cook Pasta Al Dente: Bring a large pot of heavily salted water to a rolling boil over high heat. Add the pasta and cook according to package directions until al dente (about 8-10 minutes for dried pasta). Reserve 1 cup of the starchy pasta water before draining.
- Create Truffle Base: While pasta cooks, melt 4 Tbsp unsalted butter in a 10-inch skillet over medium-low heat. Add minced garlic and sauté for 1 minute until fragrant; do not let it brown.
- Combine And Toss Pasta: Drain pasta well. Add it directly to the skillet with garlic butter. Stir in 1-2 tsp truffle oil or paste, 0.25 cup of the reserved pasta water, and half of the Parmesan. Toss vigorously until pasta is coated in an emulsified sauce, adding more pasta water if needed.
- Build Golden Yolk Nest: Divide hot, truffle-infused pasta evenly among individual serving plates. Use tongs to make a small “nest” in the center of each serving. Carefully place one fresh egg yolk into each nest.

Use whole wheat or gluten-free pasta if desired. For extra opulence, add fresh black truffle shavings. Pecorino Romano or plant-based Parmesan can be substituted.
