  • 2 tablespoons (30 ml) water
  • 1 teaspoon (5 g) fine sea salt
  • 0.5 teaspoon (2.5 g) freshly ground black pepper
  • 4 large eggs
  • 0.25 cup (20 g) fresh chopped parsley, for garnish

Instructions

  1. Prepare the Smoky Chipotle Maple Drizzle: In a small saucepan, combine 0.25 cup (60 ml) pure maple syrup, 2 tablespoons (30 ml) apple cider vinegar, 1 teaspoon (5 g) smoked paprika, 0.5 teaspoon (2.5 g) chipotle powder, 0.5 teaspoon (2.5 g) garlic powder, 0.5 teaspoon (2.5 g) onion powder, and 2 tablespoons (30 ml) water. Bring to a simmer over medium heat until gently bubbling, then reduce heat to low. Cook for 5-7 minutes, stirring occasionally, until slightly thickened and glossy. Remove from heat and set aside to cool slightly.
  2. Cook the Potatoes: Place 1.3 pounds (600 g) diced Yukon Gold potatoes in a medium saucepan. Cover with cold water by about 1 inch (2.5 cm) and add a pinch of salt. Bring to a boil, then reduce heat to a gentle simmer for 5-7 minutes, until just tender but still holding shape. Drain thoroughly and spread on a clean kitchen towel to dry slightly for crispiness.
  3. Start the Hash Base: Heat 2 tablespoons (30 ml) of the neutral oil in a large, heavy-bottomed 12-inch non-stick skillet or cast-iron pan over medium-high heat until it shimmers. Add 1 large finely diced yellow onion and cook, stirring occasionally, for 5-7 minutes until softened and translucent, releasing its sweet aroma.
  4. Combine and Cook the Hash: Add the cooked potatoes and 1 pound (450 g) diced corned beef to the skillet with the softened onions. Season with 1 teaspoon (5 g) fine sea salt and 0.5 teaspoon (2.5 g) freshly ground black pepper. Stir gently to combine all ingredients evenly, then increase the heat to high.
  5. Form the Hash and Create a Crust: Using a sturdy spatula, press the hash mixture down firmly into an even layer across the bottom of the skillet.
