  • 2 cloves garlic, minced
  • 1 L (4 cups) vegetable broth
  • 250 ml (1 cup) whole milk
  • 120 ml (1/2 cup) heavy cream
  • 5 g (1 tsp) salt, or to taste
  • 1 g (1/4 tsp) freshly ground black pepper
  • 0.5 g (1/8 tsp) white pepper (optional)
  • For the Smoky Roasted Red Pepper Swirl:
  • 2 large red bell peppers (about 400 g / 14 oz total)
  • 15 ml (1 tbsp) olive oil
  • 1 clove garlic, minced
  • 2.5 g (1/2 tsp) smoked paprika
  • 0.5 g (1/8 tsp) cayenne pepper
  • 30 ml (2 tbsp) vegetable broth
  • 5 ml (1 tsp) apple cider vinegar
  • For Garnish:
  • 15 ml (1 tbsp) fresh chives, finely chopped
  • Extra Smoky Roasted Red Pepper Swirl for drizzling

Instructions

  1. Roast Red Peppers: Preheat oven to 200°C (400°F). Roast whole bell peppers on a baking sheet for 25-30 minutes, turning halfway, until charred and tender. Transfer to a bowl, cover, and steam for 10-15 minutes. Peel off the skin, remove seeds, and roughly chop the peppers.
  2. Blend Red Pepper Swirl: In a food processor or blender, combine the peeled peppers with olive oil, minced garlic, smoked paprika, cayenne pepper, broth, and vinegar. Blend until smooth. Adjust consistency with additional broth if needed, then set aside.
  3. Sauté Aromatics: In a large pot or Dutch oven, heat vegetable oil over medium heat. Add diced onion and celery, cooking for 8-10 minutes until soft. Stir in minced garlic and cook for 1 minute until fragrant.
  4. Simmer Potatoes: Add cubed potatoes and vegetable broth to the pot. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until potatoes are very tender.
