Ingredients
- 2 pounds beef sirloin, cut into strips or chunks
- 1 onion, diced or sliced
- 3 bell peppers, sliced (any color)
- 3 cloves garlic, minced
- 3/4 cup beef broth
- 3 beef bouillon cubes, crumbled
- 1/4 cup soy sauce
- 2 tablespoons honey or brown sugar
- 1 teaspoon Worcestershire sauce
- 1 teaspoon ground ginger (or fresh grated)
- Salt and pepper to taste
- 2 tablespoons cornstarch, plus extra if needed for thickening
Instructions
- Step 1: Slice the beef into strips or chunks and season lightly with salt and pepper.
- Step 2: Place the beef at the bottom of the slow cooker. Add diced onions and bell peppers on top.
- Step 3: In a bowl, whisk together garlic, beef broth, bouillon, soy sauce, honey, Worcestershire, ginger, and a pinch of salt and pepper.
- Step 4: Pour the sauce mixture over the beef and vegetables.
- Step 5: Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until beef is tender.
- Step 6: If sauce needs thickening, mix 1 tablespoon cornstarch with 2 tablespoons cold water, then stir into the slow cooker. Cook for another 10–15 minutes on HIGH.
- Step 7: Serve hot over rice or noodles with extra sauce spooned over.
Notes
For crisper bell peppers, add them during the last hour of cooking. Try substituting chicken, tofu, or turkey for a variation. To spice it up, add chili flakes or sriracha. Leftovers can be refrigerated for up to 4 days or frozen for up to 3 months.
