Ingredients

  • 0.5 tsp smoked paprika
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • 1 tsp sea salt, plus more to taste
  • 0.5 tsp black pepper, plus more to taste
  • 14.5 oz can diced tomatoes, undrained
  • 8 oz romaine lettuce, finely shredded
  • 7 oz canned sweet corn, drained (or fresh corn if it(apos)s in season!)
  • 6 oz shredded cheddar cheese (Choose a good quality sharp cheddar for best flavor.)
  • 5 oz corn tortilla chips, lightly crushed
  • 15 oz can chickpeas, rinsed and thoroughly dried (These become our crispy, fiber-rich za(apos)atar chickpeas.)
  • 2 tbsp extra virgin olive oil, divided
  • 1.5 tsp za(apos)atar seasoning (Adds an aromatic, tangy, and nutty flavor to the chickpeas.)
  • 4 large Medjool dates, pitted and finely chopped
  • 3 tbsp fresh lime juice (Freshly squeezed makes a big difference!)
  • 1 tbsp maple syrup (Or honey if you prefer.)
  • 0.25 cup fresh mint leaves, roughly chopped

Instructions

In a medium bowl, toss the rinsed and thoroughly dried chickpeas with 1 tbsp extra virgin olive oil and the za(apos)atar seasoning until well coated. Spread them in a single layer on a baking sheet.   2. Whip Up the Vinaigrette: While the chickpeas roast, prepare the Smoky Date-Lime Vinaigrette. (If you see excessive fat, drain it thoroughly now to prevent a greasy taco salad.)
  4. Season and Simmer the Beef: Drain any excess fat from the browned beef.
