Ingredients

  • 1 lb lean ground beef
  • 1 Tbsp olive oil
  • 2 large green bell peppers, chopped
  • 1 cup uncooked long-grain white rice
  • 14.5 oz diced tomatoes, undrained
  • 15 oz tomato sauce
  • 1 medium yellow onion, chopped
  • 2 garlic cloves, minced
  • 1 cup beef broth or water
  • 1 tsp Worcestershire sauce
  • 1 tsp dried Italian seasoning
  • 0.5 tsp smoked paprika
  • to taste salt and freshly ground black pepper
  • 0.5 cup shredded cheddar or mozzarella cheese (optional)
  • fresh parsley (optional, for garnish)

Instructions

  1. Brown The Beef Mixture: Heat 1 Tbsp olive oil in a large 10-inch oven-safe skillet over medium-high heat. Add beef, onion, garlic. Cook until beef is browned and onion softened (5-7 minutes). Drain excess fat.
  2. Combine Remaining Ingredients: Stir in chopped green bell peppers, uncooked rice, diced tomatoes (undrained), tomato sauce, beef broth, Worcestershire, Italian seasoning, smoked paprika, salt, and pepper. Mix well until coated. If the mixture seems too thick, add 2-3 Tbsp extra broth.
  3. Bake To Perfection: Cover skillet tightly. Bake at 375°F (190°C) for 30-40 minutes, until rice is tender and bubbly. Uncover for the last 10 minutes; sprinkle cheese to melt, turning golden.

Notes

Don’t overcook rice; it should be tender, not mushy. Chop bell peppers uniformly for even cooking. For richer flavor, use organic crushed tomatoes. Consider low-sodium diced tomatoes to control salt. Ground turkey or chicken can substitute beef. Cauliflower rice is a low-carb alternative. Red, yellow, or orange bell peppers offer sweeter notes.
