Ingredients
- 4 large Fresh Globe Artichokes (about 300g each)
- 1 cup Panko Breadcrumbs (90g)
- 0.5 cup Freshly Grated Parmesan Cheese (50g)
- 1 large Fresh Lemon
- 0.25 teaspoon Saffron Threads (a small pinch)
- 4 cloves Garlic, minced
- 0.5 cup Fresh Parsley, chopped (about 15g)
- 3 tablespoons Extra Virgin Olive Oil (45ml)
- 3 cups Chicken or Vegetable Broth (720ml)
- 2 tablespoons Warm Water (30ml)
- 1 teaspoon Salt (6g), or to taste
- 0.5 teaspoon Black Pepper (1g), freshly ground
Instructions
- Wash and Trim Artichokes: Rinse artichokes under cold water. Snip off any thorny tips from the leaves with kitchen shears, trim the bottom stem so it sits flat, and pull away the toughest, outermost small leaves.
- Scoop Out Fuzzy Choke: Using a spoon, carefully scoop out the fuzzy choke from the center of each artichoke. This part is inedible and spiky, so be thorough.
- Rub With Lemon: Immediately rub the cut surfaces and inside of the artichokes with a lemon half. This prevents discoloration and adds a bright flavor.
- Toast Panko: In a large skillet, heat 2 tablespoons of olive oil over medium. Add Panko, stirring for 3-5 minutes until golden brown and nutty.
- Infuse Saffron: Steep saffron threads in 2 tablespoons warm water for at least 5 minutes. The water will turn golden-orange.
- Mix Filling: Combine toasted Panko, infused saffron water, garlic, parsley, Parmesan, lemon zest, salt, and pepper in a bowl. Mix thoroughly until moist and fragrant.
- Gently Open Artichoke Leaves: Carefully spread the leaves of each trimmed artichoke to make room for the delicious crumb halo.
- Fill Generously: Spoon the lemon-saffron crumb mixture into the opened leaves and generously into the center cavity of each artichoke. Press the filling gently to ensure it stays in place.
- Steam Setup: Place the stuffed artichokes upright in a large pot, such as a Dutch oven. Pour about 1 inch (2.5 cm) of chicken or vegetable broth into the bottom of the pot, ensuring the liquid does not cover the filling.
- Cover and Cook: Cover the pot tightly and steam for 35-50 minutes over medium heat. The artichokes are done when a leaf easily pulls away, the heart is soft, and a knife inserted into the bottom goes in with little resistance. If, after 35 minutes, the artichokes still feel tough, add another 0.5 cup of broth and steam for an additional 10-15 minutes.
Notes
For speed, use pre-trimmed artichoke hearts and adjust steaming time down significantly. Microwave steaming is faster but yields less depth of flavor from the broth. A tough artichoke is an undercooked one; continue steaming until truly tender. Avoid overfilling the crumb halo so tightly that it spills out during steaming. Alternative swaps include regular breadcrumbs, Pecorino Romano or nutritional yeast for Parmesan, or water with a bouillon cube for broth. A pinch of turmeric can add color if saffron is unavailable. For healthier options, use organic artichokes, whole wheat Panko, or reduced-sodium broth. This dish is best enjoyed when artichokes are in season (spring and early summer).
