Description
This easy strawberry cold foam recipe transforms ordinary iced coffee or soda into a delightful cafe-style treat, featuring the sweet, floral aroma of fresh strawberries mingling with creamy decadence.
Ingredients
- 200 g (1.5 cups) fresh strawberries, hulled and quartered
- 120 mL (0.5 cup) heavy whipping cream, very cold
- 60 mL (0.25 cup) whole milk, very cold
- 15 g (1 tablespoon) powdered sugar, sifted
- 0.5 g (0.25 teaspoon) ground green cardamom
- 2.5 mL (0.5 teaspoon) food-grade rose water
- 1 g (0.5 teaspoon) dried edible rose petals, very finely crushed
Instructions
- Prepare Strawberries: In a blender, combine the hulled and quartered fresh strawberries. Blend until completely smooth and vibrant. Strain the puree through a fine-mesh sieve for an ultra-smooth consistency, discarding any seeds.
- Combine Cold Foam Ingredients: In a chilled medium bowl, combine the very cold heavy whipping cream, cold whole milk, sifted powdered sugar, ground green cardamom, and rose water. Add half of the finely crushed dried edible rose petals.
- Whip the Foam: Using an electric hand mixer with a whisk attachment, whip the mixture on medium-high speed until it is light, airy, and forms soft peaks that gently hold their shape, typically for 2-3 minutes.
- Fold in Strawberry Puree: Gently pour the prepared strawberry puree into the whipped cream mixture. Using a rubber spatula, carefully fold until just combined and uniformly pink, retaining its airy texture.
- Serve Immediately: Generously spoon the fragrant strawberry cold foam over your favorite iced beverage, such as iced coffee, iced matcha latte, or sparkling water.
- Garnish and Style: Serve in a clear glass to highlight its delicate pink hue and creamy texture. Garnish by lightly sprinkling the remaining finely crushed dried edible rose petals over the surface.
Notes
For a dairy-free option, use well-chilled full-fat coconut cream or plant-based whipping cream. For a low-carb version, swap powdered sugar with 1-2 tablespoons of a sugar-free sweetener. Over-whipping can make the foam stiff or grainy; stop as soon as soft peaks form. Chilling the bowl helps with whipping consistency.
