Ingredients
- 6 large eggs
- 0.5 cup full-fat cottage cheese
- 0.25 cup full-fat cream cheese
- 0.25 cup full-fat milk
- 1 teaspoon cornstarch
- 0.5 teaspoon fine sea salt (for egg base)
- 0.25 teaspoon fine sea salt (for swirl)
- 0.25 teaspoon freshly ground black pepper
- 1 large roasted red pepper (150 g), peeled and seeded
- 1 clove garlic (5 g)
- 1 tablespoon olive oil
- 1 teaspoon sweet smoked paprika, plus extra for dusting
- 1 teaspoon apple cider vinegar
- 0.5 cup crumbled feta cheese (50 g)
- 1 tablespoon fresh chives, finely chopped, plus extra for garnish
Instructions
- Preheat Oven & Prep Water Bath: Preheat oven to 160 C (325 F). Place a 6-cavity silicone muffin mold or greased metal muffin tin inside a larger baking dish. Add 2.5 cm (1 inch) hot water to the dish, creating a water bath for tender, moist egg bites.
- Prepare Roasted Red Pepper Swirl: In a small food processor, combine roasted red pepper, garlic, olive oil, 1 teaspoon sweet smoked paprika, apple cider vinegar, and 0.25 teaspoon salt. Process until smooth and vibrant. Set aside for a pop of flavor.
- Blend the Egg Base: In a blender, combine eggs, cottage cheese, cream cheese, milk, cornstarch, 0.5 teaspoon salt, and black pepper. Blend on high until completely smooth and airy, 30-45 seconds. (If not blending smoothly, scrape down sides to ensure no lumps remain.)
- Fill Muffin Cups: Pour the airy egg base into each muffin mold cavity, filling them about two-thirds full. The mixture should look light and foamy.
- Add Swirl & Feta: Spoon 1-2 teaspoons of the vibrant red pepper swirl into each egg-filled cavity center. Use a toothpick to gently swirl once or twice, creating visible ribbons, avoiding overmixing. Sprinkle crumbled feta cheese and chopped chives.
- Bake Until Set: Transfer the baking dish to the preheated oven. Bake 20-25 minutes, until the egg bites are set, slightly puffed, and light golden. A toothpick inserted centrally should come out clean.
- Cool & Serve: Remove baking dish, lift mold from water bath. Let egg bites cool in the mold 5-10 minutes; this helps them retain custardy texture and shape. Gently demold. Serve warm, garnished with extra paprika and chives.
Notes
For a custardy texture, a water bath is crucial; ensure a smooth egg base blend and do not overfill muffin cups. For quicker prep, use jarred peppers or pre-chopped garlic, or reduce feta for a lighter option.
