Ingredients

  • 1/2 cup (100g) packed light brown sugar
  • 1/4 cup (50g) unsalted butter
  • 1/4 cup (60ml) heavy cream, divided
  • 1/2 teaspoon ground cardamom, divided
  • 1/2 teaspoon vanilla extract, divided
  • Pinch sea salt
  • 3/4 cup (180ml) cold strong coffee or 2 shots espresso
  • 1/2 cup (120ml) whole milk or oat milk
  • 1 cup (150g) ice cubes
  • 1/4 teaspoon xanthan gum (optional)
  • 1 tablespoon (15g) powdered sugar

Instructions

  1. Prepare Caramel Drizzle: Melt butter in a saucepan over medium heat. Add brown sugar and salt, stirring until dissolved (2-3 minutes). Stir in 2 tablespoons heavy cream until smooth. Remove from heat and stir in 1/4 teaspoon cardamom and 1/4 teaspoon vanilla. Cool for 15-20 minutes.
  2. Make Whipped Topping: Beat the remaining 1/4 cup cold heavy cream with powdered sugar and remaining 1/4 teaspoon vanilla until soft peaks form (2-3 minutes). Refrigerate until assembly.
  3. Blend Frappuccino Base: In a high-speed blender, combine chilled coffee, milk, ice, 2 tablespoons cooled caramel drizzle, and optional xanthan gum. Blend for 30-60 seconds until smooth and thick.
  4. Assemble and Serve: Drizzle caramel inside a glass. Pour blended frappuccino mixture into the glass. Top with homemade whipped cream and additional caramel drizzle. Dust lightly with cardamom if desired.

Notes

For best results, make sure the coffee base is thoroughly chilled before blending to avoid melting the ice. If the caramel sauce separates during preparation, remove it from heat and whisk vigorously to re-emulsify it.
