Description
This vibrant spring mix salad features delicate greens dressed in a tangy-sweet Pomegranate-Sumac Vinaigrette, complemented by crunchy pistachios and juicy pomegranate arils. It’s a quick, healthy, and customizable dish perfect for busy weeknights or health-conscious home cooks.
Ingredients
- 5 oz spring mix salad greens, pre-washed
- 0.25 cup extra virgin olive oil
- 2 tablespoons pomegranate molasses
- 1 tablespoon apple cider vinegar
- 1.5 teaspoons pure maple syrup
- 1 teaspoon ground sumac
- 0.5 teaspoon sea salt
- 0.25 teaspoon freshly ground black pepper
- 0.25 cup shelled unsalted pistachios
- 0.25 cup fresh pomegranate arils
- 2 tablespoons fresh mint leaves
Instructions
- Toast the Pistachios: Place shelled pistachios in a dry, non-stick skillet over medium heat. Toast for 3 to 5 minutes, stirring frequently, until lightly golden and fragrant, then cool completely.
- Prepare the Vinaigrette: In a small bowl, whisk together extra virgin olive oil, pomegranate molasses, apple cider vinegar, maple syrup, ground sumac, sea salt, and black pepper until well combined and emulsified.
- Toss the Greens: Gently transfer spring mix greens into a large mixing bowl. Pour the vinaigrette evenly over the greens and gently toss with tongs or clean hands until every leaf is lightly coated.
- Garnish and Serve: Divide the dressed salad among plates or arrange on a platter. Evenly scatter cooled, toasted pistachios and fresh pomegranate arils over the greens. Finish by artfully placing fresh mint leaves on top and serve immediately.
Notes
Swap baby spinach or arugula for spring mix. Honey or agave syrup can replace maple syrup. Walnuts or sunflower seeds work in place of pistachios, and balsamic vinegar can substitute apple cider vinegar. Always ensure greens are dry before dressing and dress just before serving to maintain crispness. For a complete meal, add cooked quinoa or grilled chicken. Consider adding sliced bell peppers or shredded carrots for more fiber.
