Description

Imagine the burst of juicy peaches, the tender crumb, and that hint of vanilla goodness that makes this recipe absolutely irresistible.

Ingredients

  • 1 cup diced peaches (peeled)
  • ½ cup vegetable oil
  • ½ cup sugar
  • 2 large eggs
  • ½ cup sour cream
  • 1 tsp vanilla extract
  • 1½ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt

Instructions

  1. Step 1: Preheat your oven to 350°F (175°C). Grease and flour a loaf pan—or line it with parchment paper.
  2. Step 2: In a large bowl, whisk oil, sugar, eggs, sour cream, and vanilla until smooth.
  3. Step 3: In a separate bowl, combine flour, baking soda, and salt.
  4. Step 4: Slowly fold dry ingredients into wet mixture—do not overmix!
  5. Step 5: Gently stir in the diced peaches.
  6. Step 6: Pour batter into your prepared pan.
  7. Step 7: Bake 25–30 minutes for mini loaves or 50–55 minutes for one large loaf.
  8. Step 8: Let cool in the pan for 10 minutes, then transfer to a wire rack.

Notes

Fresh peaches in season are a dream, but canned or frozen (thawed) work beautifully. Don’t overmix, and remember: this bread freezes like a charm. Add cinnamon or blueberries to make it your own!
