Instructions

  2. Rest the Dough: Cover the bowl with a clean kitchen towel; let dough rest at room temperature for 30 minutes to 2 hours. This helps gluten relax, making rolling much easier.
  3. Divide and Shape: Divide dough into 8-12 equal pieces for desired size. Roll each piece into a thin, round tortilla, 6-8 inches in diameter, aiming for even thickness. (If dough feels too stiff to roll, cover and let it rest another 15 minutes to relax the gluten.)
  4. Cook: Heat a cast iron skillet or griddle over medium-high heat. Cook each tortilla 60-90 seconds per side, until puffed pockets appear and lightly browned spots develop.
  5. Keep Warm: Stack cooked tortillas and cover them with a clean kitchen towel. This keeps them soft and pliable until serving.
