Ingredients
- 300g (10oz) Boneless, Skinless Chicken Breasts (2 pieces)
- 2 tbsp (30ml) Honey
- 2 tbsp (30ml) Ketchup
- 1 tbsp (15ml) Apple Cider Vinegar
- 1 tsp (5g) Smoked Paprika
- 0.5 tsp (2g) Chipotle Powder
- 1 tsp (5g) Garlic Powder
- 0.5 tsp (2g) Ground Cumin
- 0.25 tsp Black Pepper
- 200g (1 cup) Long-Grain Basmati Rice
- 360ml (1.5 cups) Water
- 1 tbsp (15ml) Vegetable Oil
- 1 tbsp (15ml) Toasted Sesame Oil
- 1 tbsp (15ml) Lime Juice
- 1 tsp (5g) Honey (for drizzle)
- 1 tbsp (10g) Toasted Sesame Seeds
- 2 tbsp (8g) Chopped Fresh Cilantro
Instructions
- Rinse and Soak Rice: Rinse basmati rice until water runs clear, then soak for 15 minutes. Drain thoroughly.
- Cook Basmati Rice: Combine rice and water, boil, then simmer covered for 12 minutes. Let rest covered for 5 minutes.
- Prepare BBQ Glaze: Whisk together honey, ketchup, vinegar, paprika, chipotle, garlic powder, cumin, and pepper.
- Marinate Chicken: Cut chicken into strips, toss with 1 tbsp glaze, and marinate for 15 minutes.
- Cook Chicken: Sauté chicken in oil until browned and cooked through (75°C/165°F), brushing with remaining glaze.
- Make Sesame Drizzle: Whisk sesame oil, lime juice, and honey.
- Assemble and Serve: Serve chicken over rice, drizzle with glaze and sesame drizzle, and garnish with sesame seeds and cilantro.
