Description

This Smoky Chipotle Cheddar Swirl Hamburger & Potato Soup combines classic hamburger flavors with creamy potato soup, elevated by a smoky chipotle kick and a beautiful cheddar swirl. It’s a hearty and comforting meal perfect for a chilly evening.


Ingredients

  • 500 g (1 lb) ground beef, halal or quality beef
  • 400 g (2 medium) potatoes, diced
  • 150 g (1 large) onion, diced
  • 80 g (1 medium) carrot, diced
  • 80 g (2 celery stalks), diced
  • 3 cloves garlic, minced
  • 30 ml (2 tbsp) olive oil
  • 1.2 L (5 cups) beef broth, halal recommended
  • 5 g (1 tsp) kosher salt
  • 2.5 g (½ tsp) black pepper, freshly ground
  • 5 g (1 tsp) smoked paprika
  • 2.5 g (½ tsp) chipotle powder
  • 2 g (1 tsp) thyme leaves, fresh
  • 1 bay leaf
  • 200 g (7 oz) cheddar cheese, shredded, sharp
  • 120 ml (½ cup) heavy cream
  • 30 g (¼ cup) cheddar cheese, extra shredded (for croutons)
  • 1 tsp olive oil (for croutons)
  • 2 tbsp cilantro, chopped (garnish)

Instructions

  1. Brown the Beef: Sauté ground beef in olive oil until browned, about 5-6 minutes. Drain excess grease.
  2. Sauté Aromatics: Cook onion, carrot, and celery with beef for 4 minutes, then add garlic for 1 minute.
  3. Build Flavor Base: Add potatoes, smoked paprika, chipotle powder, thyme, bay leaf, salt, and pepper.
  4. Simmer to Perfection: Add beef broth, bring to a boil, then simmer for 15-20 minutes until potatoes are tender.
  5. Prepare Cream: Melt 150g cheddar and heavy cream together, whisking in chipotle powder.
  6. Combine & Enrich: Stir half of the cheddar cream into the soup.
  7. Swirl & Serve: Ladle soup, top with remaining cream, and swirl gently.
  8. Garnish & Enjoy: Toast extra cheddar for croutons, sprinkle over soup, and garnish with cilantro.

Notes

For optimal flavor, use freshly grated cheddar cheese. Adjust chipotle powder to control the spice level. The soup tastes even better the next day.
