Description

This Smashed Avocado Toast Recipe with Poached Egg is a simple yet satisfying meal featuring golden toast, creamy smashed avocado, and a perfectly poached egg with a runny yolk. It’s ideal for breakfast, brunch, or a light dinner, offering healthy fats and protein.

Ingredients

  • 2 large ripe avocados, approx. 400 g
  • 4 fresh eggs
  • 2 slices crusty bread
  • 1 tbsp lemon juice, approx. 15 ml
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Pinch chili flakes, optional

Instructions

  1. Prep Avocado: In a bowl, mash the ripe avocados with lemon juice, a pinch of salt, and freshly ground pepper. Add chili flakes if using. Mix until desired creaminess, tasting and adjusting seasoning as needed.
  2. Toast Bread: Toast your chosen bread to a golden, crispy perfection in a toaster or pan over medium heat, ensuring it’s sturdy enough to hold toppings.
  3. Poach Eggs: Fill a medium saucepan with about 3-4 inches of water and bring to a gentle simmer (small bubbles, not a rolling boil). Add 1 tsp white vinegar. Carefully crack each egg into a small bowl, then gently slide it into the simmering water. Cook for 3-4 minutes for a beautifully jammy yolk. Remove each egg with a slotted spoon, letting excess water drain.
  4. Assemble and Serve: Spread the smashed avocado generously over the warm toast. Carefully top each slice with a perfectly poached egg. Finish with a sprinkle of extra salt, pepper, and chili flakes if desired.

Notes

To prevent egg whites from spreading, ensure water is not boiling vigorously and eggs are very fresh. For a quicker option on busy mornings, fry the egg instead of poaching. This recipe is adaptable; use gluten-free bread for sensitivities or omit chili flakes for a milder, kid-approved version. Boost flavor with Everything Bagel seasoning, fresh herbs (like cilantro), or sliced radishes. Lime juice can be used as a substitute for lemon juice.
