Description
Healthy Slow Cooker Sweet and Sour Chicken. No breading or frying! A delicious, easy crockpot recipe with pineapple sauce. Family favorite.
Ingredients
- 1½ lbs boneless skinless chicken breasts, cut into 1-inch pieces
- 1 tsp salt
- ½ tsp black pepper
- 2 tbsp cornstarch
- 1 tbsp vegetable oil
- 1 cup pineapple juice
- ¼ cup apple cider vinegar
- ¼ cup honey
- ¼ cup ketchup
- 3 tbsp soy sauce
- 1 tbsp brown sugar
- 2 cloves garlic, minced
- 1 tsp fresh ginger, grated
- 1 red bell pepper, cut into larger pieces
- 1 green bell pepper, cut into larger pieces
- 1 small red onion, cut into chunks
- 1 cup pineapple chunks, fresh or canned and drained
Instructions
- Step: Place chicken in a bowl; add salt, pepper, and cornstarch, tossing to coat evenly.
- Step: Heat vegetable oil in a large skillet over medium-high heat and sear chicken pieces for 2-3 minutes.
- Step: Transfer the seared chicken into the slow cooker.
- Step: In a mixing bowl, whisk together pineapple juice, apple cider vinegar, honey, ketchup, soy sauce, brown sugar, garlic, and ginger.
- Step: Pour the sauce mixture over the chicken, cover, and cook for 2-3 hours on high or 4-5 hours on low.
- Step: Add bell peppers, onion, and pineapple chunks during the final 30 minutes of cooking and stir gently.
- Step: Serve hot over rice or noodles.
Notes
Ensure you add the bell peppers and pineapple only in the final 30 minutes to maintain their texture. For a thicker sauce, you may stir in a small cornstarch slurry at the end.
