A flavorful and easy slow cooker dinner featuring tender shredded chicken seasoned with Mediterranean spices, served with fresh tzatziki and pita bread. Perfect for busy weeknights.
Ingredients
- 2.5 lbs (1.1 kg) boneless, skinless chicken thighs
- 1/4 cup (60 ml) extra virgin olive oil
- 1/4 cup (60 ml) fresh lemon juice
- 2 tablespoons apple cider vinegar
- 6 cloves garlic, minced
- 2 tablespoons dried oregano
- 1 teaspoon onion powder
- 1.5 teaspoons salt
- 1 teaspoon freshly ground black pepper
- 2 cups (450g) plain full-fat Greek yogurt
- 1 English cucumber, grated and squeezed dry
- 2 tablespoons fresh dill, finely chopped
- 2 tablespoons fresh lemon juice
- 2 cloves garlic, minced
- 1 tablespoon extra virgin olive oil
- 1/2 teaspoon salt
- 8 pita breads, warmed
- Optional toppings: diced tomatoes, sliced red onion, shredded romaine lettuce, crumbled feta cheese, pitted Kalamata olives
Instructions
- Step: In a bowl, whisk together 1/4 cup olive oil, 1/4 cup lemon juice, apple cider vinegar, 6 minced garlic cloves, oregano, onion powder, 1.5 teaspoons salt, and pepper.
- Step: Place chicken thighs in a bowl or bag, coat with the marinade, and refrigerate for 30 minutes to overnight.
- Step: Place chicken and marinade into a 6-quart slow cooker. Cook on LOW for 5-6 hours or HIGH for 3-4 hours until tender.
- Step: Prepare tzatziki by combining yogurt, grated/dried cucumber, dill, 2 tablespoons lemon juice, 2 minced garlic cloves, 1 tablespoon olive oil, and 1/2 teaspoon salt. Refrigerate for at least 30 minutes.
- Step: Shred the cooked chicken using two forks and stir it into the cooking juices.
- Step: Optionally, broil the shredded chicken on a baking sheet for 2-4 minutes for crisp edges. Serve in warm pitas with tzatziki and desired toppings.
Notes
Ensure cucumber is squeezed very dry to keep the tzatziki thick. Use full-fat Greek yogurt for the best flavor and texture.
