Slow Cooker Garlic Butter Beef Bites & Potatoes delivers an incredible blend of flavor. As the beef slowly cooks in garlic-infused butter, it becomes tender and flavorful, while the potatoes soak up all the rich juices.
Ingredients
- 2 pounds beef chuck roast, cut into 1-inch cubes
- 1 pound baby potatoes, halved
- 1/2 cup unsalted butter
- 5 cloves garlic, minced
- 1 tablespoon Worcestershire sauce
- 1 tablespoon soy sauce
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Fresh parsley, chopped (for garnish)
Instructions
- Step: Grease your slow cooker with a light coat of cooking spray to prevent sticking.
- Step: In a large bowl, toss the beef cubes, halved potatoes, minced garlic, Worcestershire sauce, soy sauce, dried thyme, salt, and pepper until everything is well-coated.
- Step: Transfer the mixture into the slow cooker.
- Step: In a small saucepan over low heat, melt the unsalted butter. Pour the melted butter evenly over the beef and potatoes in the slow cooker.
- Step: Cover with the lid and set the slow cooker on low for 6-8 hours or on high for 3-4 hours.
- Step: After the cooking time is up, check the beef for tenderness. It should break apart easily with a fork.
- Step: Before serving, sprinkle with freshly chopped parsley for a pop of color and added flavor.
Notes
Ensure the beef is cut into uniform 1-inch cubes for even cooking. For a thicker sauce, mix a small amount of cornstarch with cold water and stir into the cooker during the last 30 minutes.
