Crock Pot Crack Potato Soup is a creamy, cheesy, and addictive comfort food perfect for weeknight dinners.


Ingredients

  • 4 cups Russet Potatoes, peeled and chopped into 1-inch cubes
  • 4 cups Chicken or Vegetable Broth
  • 1 packet Ranch Seasoning Mix
  • 2 cups Shredded Cheddar Cheese
  • Salt, to taste
  • Black Pepper, to taste
  • 1 cup Heavy Cream or Half-and-Half
  • 1 cup Meat-free savory bits, optional
  • 1/4 cup Fresh Green Onions, chopped

Instructions

  1. Prep Potatoes: Peel and dice your potatoes into uniform, 1-inch cubes.
  2. Layer Flavors: Place the diced potatoes in your crock pot. Sprinkle the ranch seasoning evenly over the potatoes, then layer on the shredded cheddar cheese.
  3. Add Broth: Pour in the chicken or vegetable broth, just enough to cover the potatoes.
  4. Cook Low and Slow: Cover and cook on low for 7-8 hours or on high for 4 hours.
  5. Achieve Creaminess: Stir in the heavy cream or half-and-half.
