Description

This old fashioned slow cooker French onion chicken and rice is rich, creamy, and full of comforting flavor with caramelized onions and melted Swiss cheese. An easy, cozy dinner inspired by grandma’s kitchen.


Ingredients

  • 1 tablespoon oil
  • 1 tablespoon butter
  • 2 medium yellow onions, thinly sliced
  • 4 boneless, skinless chicken breasts
  • 2 teaspoons garlic powder, divided
  • 1 teaspoon paprika
  • 1 teaspoon black pepper, divided
  • 1 can cream of chicken soup
  • 2 cups low sodium chicken broth
  • 1 cup white rice, uncooked
  • 1 envelope dry onion soup mix
  • 4 slices Swiss cheese
  • Salt, to taste
  • Fresh parsley, for garnish (optional)

Instructions

  1. Step: Heat the oil and butter in a large skillet over medium heat. Add the sliced onions and cook, stirring occasionally, until softened and lightly golden. Transfer the onions to a plate and set aside.
  2. Step: Season the chicken breasts evenly with garlic powder, paprika, and black pepper.
  3. Step: Using the same skillet, sear the chicken breasts just until lightly browned on both sides. The chicken should not be fully cooked. Remove and set aside.
  4. Step: In a large bowl, stir together the cream of chicken soup, chicken broth, remaining garlic powder, black pepper, uncooked white rice, and the dry onion soup mix until well combined.
  5. Step: Spread the rice mixture evenly in the slow cooker. Arrange the seared chicken on top, then spoon the caramelized onions over the chicken.
  6. Step: Cover and cook on High for 3 hours or on Low for 5 hours, until the chicken is cooked through and the rice is tender.
  7. Step: Lay the Swiss cheese slices over the chicken, cover, and let sit for about 5 minutes until melted. Garnish with fresh parsley and serve warm.

Notes

Caramelizing the onions adds deep, classic flavor. Chicken thighs can be used for extra tenderness. Turn off the slow cooker once the rice is tender to keep it creamy. Leftovers keep well in the refrigerator for up to 3 days.
