Description

Slow Cooker Beef Stew and Dumplings is a hearty, comforting meal packed with tender vegetables and fluffy, herb-infused dumplings. This simple one-pot recipe requires no browning, making it the perfect stress-free dinner for busy days.


Ingredients

  • 2 pounds chuck steak, cubed
  • 2 tbsp flour (seasoned with salt and pepper)
  • 2 cups hot beef stock (or low sodium broth)
  • â…“ cup extra beef stock (as a substitute)
  • 3 tbsp tomato paste
  • 2 tbsp balsamic vinegar
  • 2 tbsp dark soy sauce
  • 2 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 large onions, finely diced
  • 2 leeks, white parts only, sliced
  • 5 carrots, sliced
  • 4 parsnips, sliced
  • 2 bay leaves
  • 1 sprig rosemary
  • Fresh parsley, chopped, to garnish
  • 1 cup self-rising flour
  • ½ cup plain yogurt
  • 1 tbsp chopped parsley or chives
  • 2 tbsp grated Parmesan
  • 1 tsp garlic powder
  • ½ tsp salt
  • Water, as needed, to bind

Instructions

  1. Step: Toss the beef cubes with the seasoned flour until lightly coated.
  2. Step: Preheat the slow cooker to HIGH. Combine the hot beef stock, extra beef stock, tomato paste, balsamic vinegar, soy sauce, minced garlic, salt, and pepper in the slow cooker and stir well.
  3. Step: Add the onions, leeks, parsnips, and carrots to the slow cooker and stir to combine.
  4. Step: Add the floured beef, bay leaves, and rosemary. Cook on HIGH for 5 hours or on LOW for 8 hours.
  5. Step: Prepare the dumpling dough by mixing self-rising flour, herbs, Parmesan, garlic powder, and salt in a bowl. Stir in the yogurt and knead briefly, adding a little water if needed to bind. Divide into 6-8 portions and roll into balls.
  6. Step: Remove the bay leaves and rosemary from the stew. Place the dumplings on top of the stew, spaced slightly apart. Cover and cook on HIGH for an additional hour.
  7. Step: Garnish with fresh parsley and serve hot.

Notes

Store leftovers in an airtight container in the fridge for 2–3 days. Reheat gently on the stovetop or microwave. The stew base can be frozen for up to 3 months; thaw and add fresh dumplings before serving.
