Ingredients
- 3 lb chuck roast (trimmed)
- 1 cup beef broth
- 2 tbsp steak seasoning
- 1 tbsp dried thyme
- 2 lbs potatoes (optional)
- 1 lb carrots (optional)
- 1 yellow onion (optional)
- 1 tbsp cornstarch
- 1/3 cup water
Instructions
- Step: Season the chuck roast by coating it with oil and generously applying steak seasoning and thyme.
- Step: Sear each side of the roast in a hot skillet for 2-3 minutes until browned to lock in flavor.
- Step: Pour beef broth into the skillet, simmer for one minute while scraping the bottom, then transfer to the slow cooker.
- Step: If using, prepare vegetables by cutting into large pieces, season them, and place on top of the roast in the slow cooker.
- Step: Slow cook on low for 7-8 hours or high for 3.5-4 hours until tender.
- Step: Check tenderness; if ready, mix cornstarch with water, stir into liquid to thicken gravy, and cook an additional hour if needed.
- Step: Serve warm by removing meat from the slow cooker; slice or shred as desired.
Notes
For best results, use low heat to allow the flavors to meld and the meat to become ultra-tender. Ensure you check for tenderness with a fork before serving.
