Description

Ingredients

  • two salmon fillets, approximately 360 g total, skin-on or skin-off
  • 15 ml olive oil
  • 30 g white miso paste
  • 45 ml maple syrup
  • 30 ml low-sodium soy sauce
  • 15 ml rice vinegar
  • 5 ml chili garlic sauce
  • 5 g fresh ginger, grated
  • 3 g fresh garlic, minced
  • 15 g green onions, thinly sliced (for garnish)
  • 5 g toasted sesame seeds (for garnish)

Instructions

  1. Prep Oven and Glaze Base: Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper. In a small bowl, whisk together the white miso paste, maple syrup, soy sauce, rice vinegar, chili garlic sauce, grated fresh ginger, and minced fresh garlic until completely smooth.
  2. Prepare Salmon Fillets: Pat the salmon fillets completely dry with paper towels. Lightly brush all sides of the fillets with olive oil. Place the salmon fillets skin-side down onto the prepared baking sheet.
  3. Initial Glaze Application and Bake: Generously brush about half of the prepared glaze over the top and sides of each fillet. Bake for 8-10 minutes.
  4. Finish Glazing and Baking: Remove the baking sheet from the oven. Carefully brush the salmon fillets with the remaining glaze. Return to the oven and bake for another 5-8 minutes, or until the salmon flakes easily with a fork (internal temperature reaches 63°C / 145°F). If the glaze looks like it might burn, lower the heat slightly to 180°C (350°F) for the final 5 minutes, or tent loosely with foil.
  5. Rest and Serve: Carefully transfer the salmon fillets to serving plates. Let them rest for 2-3 minutes. Drizzle any remaining glaze from the baking sheet over the salmon and garnish generously with sliced green onions and toasted sesame seeds.

Notes

To avoid burning the glaze, lower the oven temperature or tent the salmon loosely with foil during the final minutes of baking. For best flavor, use fresh ginger and garlic instead of dried powder. If you need a gluten-free option, substitute tamari or coconut aminos for the soy sauce.
