Ingredients

  • 1 lb (450g) raw, peeled, deveined, tails off shrimp
  • 810 slices sturdy white bread (like brioche or milk bread)
  • 1 large beaten egg
  • 0.5 cup (70g) white sesame seeds
  • 1 Tbsp (2g) chili threads
  • 1 Tbsp (15g) fresh, grated ginger
  • 2 cloves minced garlic
  • 2 Tbsp (15g) sliced green onion
  • 1 Tbsp (15ml) low-sodium soy sauce
  • 1 tsp (5ml) toasted sesame oil
  • 23 cups (470-700ml) neutral cooking oil (like canola or vegetable), for frying

Instructions

  1. Prep Shrimp: Peel, devein, and pat 1 lb (450g) raw shrimp very dry with paper towels. Mince finely or pulse in a food processor with garlic and ginger until a coarse paste forms. (If your paste looks too wet, add 1-2 tsp of cornstarch to absorb moisture.)
  2. Mix Paste: In a medium bowl, combine the shrimp paste with the beaten egg, low-sodium soy sauce, toasted sesame oil, and sliced green onion. Mix well until everything is just combined.
  3. Assemble Toast: Spread about 1-2 Tbsp of the shrimp mixture evenly onto one side of each bread slice. Press 0.5 cup (70g) white sesame seeds and 1 Tbsp (2g) chili threads firmly onto the shrimp paste side.
  4. Cook Toast: Heat neutral cooking oil in a large 10-inch skillet over medium-high heat to 350(degrees)F (175(degrees)C). Carefully place toast shrimp-side down. Fry for 2-3 minutes until golden and crispy.
  5. Flip And Finish: Gently flip toast over and fry bread side for 1-2 minutes until golden brown and crunchy. Work in batches to prevent overcrowding.
  6. Drain And Serve: Use tongs to remove the cooked shrimp toast from the oil. Drain immediately on a wire rack set over paper towels to remove excess oil. Cut each slice into triangles and serve hot.
