Instructions

  1. Prep Seafood: Pat the seafood dry and season lightly. Sear in batches in a hot pan for 1-2 minutes per side until just opaque, then set aside.
  2. Sauté Vegetables: Melt butter in a large pot. Add onion, leek, carrots, and celery; cook for 8-10 minutes until softened. Add garlic and cook for 1 minute.
  3. Make Saffron Sauce: Sprinkle flour over vegetables and stir for 1-2 minutes. Gradually whisk in fish stock and milk. Bring to a simmer until thick.
