Description

Chewy, no-bake Scotcheroos with peanut butter, chocolate, and butterscotch—perfect for quick family-friendly desserts.


Ingredients

  • 1 cup creamy peanut butter
  • 1 cup corn syrup (or honey/brown sugar)
  • 1 cup sugar
  • 6 cups Rice Krispies, Special K, or Chex
  • 1 cup chocolate chips
  • 1 cup butterscotch chips
  • 1 tsp vanilla extract
  • 1 tbsp butter

Instructions

  1. Prepare the Base: Melt peanut butter, corn syrup, and sugar in a saucepan over medium heat. Bring briefly to a low boil.
  2. Stir In Cereal: Fold in the cereal until fully coated.
  3. Press Into Pan: Line a 9×13 pan with parchment or grease lightly. Press mixture gently into the pan.
  4. Melt Topping: In a microwave or on the stovetop, melt chocolate and butterscotch chips, stirring every 30 seconds.
  5. Pour & Set: Spread the melted topping over the cereal mixture and chill for 30–45 minutes.
  6. Slice & Serve: Cut into bars, roll into balls, or shape into truffles for serving.

Notes

For softer bars, reduce the boiling time. Use gluten-free cereals for a gluten-free option or dairy-free chocolate for vegan versions. Wrap tightly and freeze for up to 2 months.
