Ingredients

  • 1 lb large sea scallops, dry-packed
  • 3 cups corn (fresh or frozen)
  • 3 Tbsp unsalted butter
  • 0.25 cup heavy cream
  • 1 medium shallot, minced
  • 1 garlic clove, minced
  • 0.5 cup chicken or vegetable broth
  • 1.5 Tbsp high-smoke point cooking oil
  • 2 Tbsp fresh chives or parsley, chopped
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Prepare Corn Puree: Saute shallots and garlic in 1 Tbsp butter over medium heat. Add corn and broth, then simmer for 5-7 minutes until tender. Blend until smooth with the cream and season well.
  2. Prepare Scallops: Pat scallops very dry with paper towels. Season generously with salt and pepper.
  3. Sear Scallops: Heat 1 Tbsp oil over medium-high heat until shimmering. Sear scallops for 1.5-2 minutes per side until a deep golden-brown crust forms.
  4. Optional Butter Basting: Add the remaining 2 Tbsp butter during the last 30 seconds of searing. Spoon the melted butter and juices over the scallops.
  5. Assemble and Serve: Spoon the warm Golden Corn Puree onto plates. Top with the seared scallops and garnish with fresh herbs. Serve immediately.
