  • 0.5 cup (60g) breadcrumbs
  • 1 large egg

  • 0.5 tsp black pepper (for burgers)
  • 0.5 tsp garlic powder
  • 1 cup (150g) finely chopped or grated cooked beets
  • 0.5 cup (120g) mayonnaise
  • 0.25 cup (30g) finely chopped dill pickles or capers
  • 2 Tbsp (15g) finely minced red onion or shallot
  • 1 Tbsp (7g) chopped fresh dill (for sauce)
  • 0.25 tsp fine sea salt (for sauce)
  • 0.25 tsp black pepper (for sauce)

Instructions

  1. Prepare Beet-Tartar Sauce: Finely chop or grate cooked beets, pickles, minced red onion, and fresh dill. In a small bowl, combine these with mayonnaise, 0.25 tsp salt, and 0.25 tsp pepper. Stir well until evenly mixed and the sauce turns pink. Chill in the fridge for at least 30 minutes to allow flavors to meld.
  2. Make Salmon Patties: If using fresh salmon, remove any skin and finely chop the fillets (avoid mincing). In a large mixing bowl, combine the chopped salmon, breadcrumbs, egg, chopped fresh herbs, 0.5 tsp salt, 0.5 tsp pepper, and garlic powder. Mix gently with hands until just combined; the mixture should feel slightly tacky.
  3. Form the Burgers: Divide the salmon mixture into 4 to 6 equal portions. Gently form each portion into a patty, about 1-inch thick and 3 inches wide. Avoid overworking.
  4. Cook Salmon Burgers: Heat 1 Tbsp oil in a 10-inch skillet over medium heat until shimmering. Place patties in the hot skillet (cook in batches if needed). Cook for 4-5 minutes per side, until golden brown and cooked through (145°F internal temperature). Alternatively, air fry at 375°F (190°C) for 12-15 minutes, flipping halfway.

Notes

Cook fresh salmon within 1-2 days of purchase. Cooked salmon patties store for 3-4 days in an airtight container in the fridge. Store cooked beets separately until assembling the sauce. Chill the beet-tartar sauce for at least 30 minutes for best flavor. If patties seem too moist, add more breadcrumbs to the mixture. For a healthier, crispier patty, air fry as an alternative to pan-frying.
