Ingredients
- 4 (6 oz / 170g) salmon fillets, skin-on (for crispy skin) or skin-off (for ease)

Instructions
- Prepare the Rice: Rinse 1 cup (200g) of rice thoroughly under cold water until it runs clear. Combine with 1.5 cups (360ml) water in a medium pot. Bring to a boil, then immediately reduce heat to low, cover tightly, and simmer for 18-20 minutes until the water is fully absorbed and the grains look plump. Let stand, still covered, for 5 minutes off the heat, then fluff with a fork.
- Make the Soy-Chili Glaze: In a small bowl, whisk together 0.25 cup (60ml) low-sodium soy sauce (or tamari), 0.25 cup (60ml) sweet chili sauce, 1 tbsp (15g) grated fresh ginger, and 2 cloves minced garlic. Set aside half of the glaze for serving later.
- Prepare and Cook Salmon: Pat 4 salmon fillets (about 6 oz / 170g each) thoroughly dry with paper towels. Season lightly with salt and pepper. Heat 1 tbsp (15ml) of olive oil in a large 10-inch skillet over medium-high heat until it shimmers. Place salmon skin-side down (if applicable) and cook for 4-5 minutes until the skin is crispy and golden brown. Flip the salmon, pour the remaining half of the glaze over the top. Cook for another 5-8 minutes, or until cooked through to your desired doneness (internal temperature 145 degrees F / 63 degrees C), the flesh flaking easily.
- Assemble and Serve: Divide the fluffy cooked rice among plates, forming a neat base. Top each with a glistening salmon fillet, drizzling with the reserved Soy-Chili Glaze. Garnish generously with vibrant sliced scallions and a final squeeze of fresh lime juice.
