Ingredients
- 3 cups all-purpose flour
- 2.25 teaspoons instant dry yeast
- 1 tablespoon granulated sugar
- 1 teaspoon fine sea salt
- 1 cup warm water (105-115°F / 40-46°C)
- 4 tablespoons extra virgin olive oil, divided
- 3 tablespoons Za’atar spice blend, divided
- 1 teaspoon flaky sea salt
Instructions
- Activate Yeast: Combine water, yeast, sugar. Stir gently, let sit 5 minutes until foamy. (If it doesn’t foam, your yeast may be inactive; try again.)
- Mix Dough: Add 30 ml (2 tablespoons) olive oil, flour, fine salt, and 10 g (2 teaspoons) Za’atar to the yeast mixture. Mix with a spoon until a shaggy dough forms.
- Knead Dough: Knead the dough on a lightly floured surface for 5-7 minutes until smooth and elastic. (For a stand mixer, knead 3-4 minutes. Avoid over-kneading for tender rolls.)
- First Rise: Lightly grease a bowl with olive oil, coat the dough, and cover. Let it rise in a warm spot for 45-60 minutes until doubled in size.
- Prepare Pan & Shape: Preheat oven to 375°F (190°C). Grease a 9×13 inch baking pan. Punch down the dough, then divide it into 12 equal pieces. Shape each piece into a ball and arrange them evenly in the prepared pan.
- Second Rise: Cover the pan with a towel. Let the rolls rest for 15-20 minutes, allowing them to puff up slightly.
- Brush & Bake: Brush the rolls with 15 ml (1 tablespoon) olive oil and sprinkle with 5 g (1 tablespoon) Za’atar. Bake for 18-22 minutes until golden brown. (Tent with foil if browning too quickly.)
- Drizzle & Serve: Remove from the oven. While warm, drizzle the rolls with the remaining 15 ml (1 tablespoon) olive oil and sprinkle with flaky sea salt. Arrange and enjoy warm!
Notes
If your yeast does not foam after activating, it may be inactive and should be replaced. For a richer flavor, warm milk can be used instead of water. Consider partial whole wheat flour for healthier rolls. Avoid over-kneading the dough to ensure tender rolls. Tent the rolls with foil if they start browning too quickly during baking.
