Instructions

  1. Melt Butter & Oil: In a medium 10-inch skillet over medium heat, melt 2 tablespoons butter with 1 tablespoon olive oil for about 2 minutes, until butter is liquid and starting to foam.
  2. Make a Light Roux: Whisk in 1 tablespoon all-purpose flour until smooth and lightly golden, cooking for about 1 minute, forming a paste-like consistency.
  3. Add Broth & Simmer: Gradually whisk in 1 cup chicken broth, bringing the sauce to a gentle simmer. Cook, stirring occasionally, for 5-7 minutes until it thickens slightly and coats the back of a spoon.
  4. Introduce Lemon & Capers: Remove the skillet from the heat. Stir in 0.25 cup fresh lemon juice and 2 tablespoons drained capers for about 1 minute.
  5. Finish & Season: Stir in 2 tablespoons fresh chopped parsley. Season with salt and pepper to taste, adjusting flavors for about 1 minute. For a thinner sauce, add a splash more broth.
