Wake up to this delicious Baked Oatmeal with Peaches … it’s super easy to make and so scrumptious!
Ingredients
- nonstick cooking spray
- 2 cups old fashioned rolled oats
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon kosher salt
- 2 cups chopped peaches (about 1 1/2 large peaches)
- 2 cups milk
- 2 large eggs, lightly beaten
- 1/2 cup chopped pecans
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
Instructions
- Step: Preheat oven to 350°F (175°C). Spray an 8 x 8-inch baking dish with nonstick cooking spray; set aside.
- Step: Stir together the oats, baking powder, cinnamon, and salt in a large bowl.
- Step: Add the peaches, milk, eggs, pecans, maple syrup, and vanilla extract. Mix well.
- Step: Transfer mixture to baking dish, then bake until oats are set and top is lightly browned (about 40 to 45 minutes).
- Step: Serve oatmeal hot or warm. Enjoy!
Notes
Any variety of peaches will work for this recipe. Choose the juiciest, sweetest ones you can find for the best results. You can serve Baked Oatmeal on its own, or top it with yogurt, fresh fruit, or nuts. Sprinkle with a little brown sugar or drizzle with maple syrup if you like a sweeter breakfast.
