Instructions

  2. Brown Turkey: Increase heat. Add ground turkey, breaking it up, until browned (5-7 minutes). Drain any excess fat well.
  3. Build Flavor: Reduce heat. Stir in tomato paste and spices (chili powder, cumin, oregano). Cook for 1-2 minutes, stirring, until fragrant and lightly toasted.
  4. Simmer Chili: Return turkey to the pot. Add diced tomatoes, both types of beans, and vegetable stock. Stir to combine. Bring to a boil, then reduce heat, cover, and simmer for 30-60 minutes. If the chili appears too thin, uncover and simmer for an additional 10-15 minutes.
  5. Prepare Tangy Swirl: While the chili simmers, blend roasted red peppers, feta cheese, garlic, olive oil, and 2 tbsp water or stock in a food processor until smooth and creamy.
