Description

This oyster shooter recipe is a vibrant and refreshing appetizer featuring creamy coconut, zesty lime, and a hint of ginger, perfect for elegant gatherings or a special night at home. It offers a gourmet feel while being deceptively simple to prepare.

Ingredients

  • 12 fresh oysters, shucked (liquor reserved)
  • 120 ml (0.5 cup) full-fat coconut milk
  • 15 g (1 tablespoon) fresh ginger, grated
  • 30 ml (2 tablespoons) fresh lime juice
  • 5 ml (1 teaspoon) lime zest, finely grated
  • 2 g (0.5 teaspoon) green chili, very finely minced (seeds removed for less heat)
  • 1 g (0.25 teaspoon) fine sea salt
  • 2 g (0.5 teaspoon) granulated sugar or maple syrup
  • 15 g (0.25 cup) fresh cilantro, finely chopped
  • Small red chili, thinly sliced into rings (for garnish, optional)
  • Extra lime zest for garnish
  • Small sprigs of fresh cilantro for garnish

Instructions

  1. Prepare the Creamy Ginger-Lime Coconut Swirl: In a small saucepan, combine the coconut milk, grated ginger, lime juice, lime zest, minced green chili, salt, and sugar. Heat gently over medium-low heat for 3-5 minutes, stirring occasionally, until just warm and fragrant (do not boil). Remove from heat and stir in the chopped cilantro. Allow the sauce to cool completely to room temperature, then chill in the refrigerator for at least 30 minutes, or until very cold and spoonable but thick.
  2. Shuck the Oysters: Carefully shuck each oyster, detaching it completely from its shell. Transfer each oyster into a small bowl, reserving its liquor. Strain the reserved oyster liquor through a fine-mesh sieve to remove any shell fragments and set aside.
  3. Assemble the Shooters: For each shooter, pour approximately 15 ml (1 tablespoon) of the chilled Ginger-Lime Coconut Swirl into the bottom of a clear shot glass. Gently place one shucked oyster on top of the sauce layer. Add a small spoonful (about 5 ml or 1 teaspoon) of the reserved oyster liquor over the oyster.
  4. Finish and Garnish: Top the oyster with another 5 ml (1 teaspoon) drizzle of the Ginger-Lime Coconut Swirl. Arrange the shot glasses on a shallow platter (e.g., dark slate or white ceramic) filled with a thin layer of crushed ice to keep them perfectly cold. For each shooter, artfully place a small sprig of fresh cilantro and a tiny pinch of lime zest on top of the sauce. If using, carefully place one thin ring of red chili beside the cilantro for a vibrant color contrast.

Notes

The Ginger-Lime Coconut Swirl can be made up to a day in advance and kept chilled, making it ideal for meal prep and easy entertaining. Always ensure oysters are fresh and smell like the clean ocean. When shucking, protect hands with a sturdy towel. Do not overfill shot glasses.
