Ingredients
- 200 g (7 oz) dried linguine, or substitute
- 2 tbsp (30 ml) extra-virgin olive oil
- 4 cloves garlic, minced
- 1 small yellow onion, finely diced
- 1 roasted red bell pepper, diced
- 250 ml (1 cup) low-sodium vegetable broth
- 200 ml (¾ cup) unsweetened oat milk, or substitute
- 120 g (4 oz) softened cream cheese
- 60 g (2 oz) grated Parmesan cheese
- 1 tsp (5 ml) lemon juice
- ½ tsp (2.5 ml) smoked paprika
- ¼ tsp (1.25 ml) black pepper
- Salt, to taste
- 1 tbsp (15 ml) truffle oil (optional)
- 2 tbsp (30 ml) toasted pine nuts (garnish)
- 2 tbsp (30 g) chopped fresh parsley (garnish)
- 1 tsp (5 g) lemon zest (garnish)
Instructions
- Sauté Aromatics: Heat oil, sauté onion until translucent (3-4 minutes).
- Bloom Garlic & Pepper: Add garlic and red pepper, cook until fragrant (1 minute).
- Create Creamy Base: Add broth and oat milk, simmer gently.
- Emulsify Sauce: Stir in cream cheese and Parmesan until smooth.
- Add Pasta & Seasonings: Add linguine, paprika, pepper, and salt.
- Cook to Al Dente: Cook, stirring frequently, until pasta is al dente (10-12 minutes).
- Finish with Brightness: Stir in lemon juice, adjust seasoning.
- Rest & Thicken: Let pasta rest for 2 minutes.
- Plate & Garnish: Plate, drizzle with truffle oil (optional), garnish with pine nuts, parsley, and lemon zest.
Notes
Ensure cream cheese is fully softened for a smooth sauce. Add a splash of broth if the pasta seems dry during cooking.
