Description

My Go-To Healthy Crockpot Beef Stew is a flavorful, nutritious dinner option that practically makes itself in a slow cooker.


Ingredients

  • 2 lbs Lean Beef Stew Meat (cut into 1-inch cubes)
  • 1 tablespoon Olive Oil
  • 1 large Yellow Onion (diced)
  • 3 cloves Garlic (minced)
  • 4 Carrots (peeled and cut into 1-inch pieces)
  • 4 Celery Stalks (cut into 1-inch pieces)
  • 1.5 lbs Small Red Potatoes (quartered)
  • 1 28-oz can Low-Sodium Crushed Tomatoes
  • 4 cups Low-Sodium Beef Broth
  • 1 cup Non-Alcoholic Red Wine Substitute
  • 2 Bay Leaves
  • 1 tablespoon Dried Thyme
  • 1 teaspoon Dried Rosemary
  • 1 teaspoon Smoked Paprika
  • Salt and Freshly Ground Black Pepper (to taste)
  • 2 tablespoons Cornstarch
  • 2 tablespoons Cold Water
  • ½ cup Fresh Parsley (chopped, for garnish)

Instructions

  1. Step: Prep your ingredients by trimming and cubing the beef, chopping all the vegetables and mincing the garlic; measure out your liquids and seasonings.
  2. Step: Brown the beef in a skillet with olive oil until deeply golden on all sides and deglaze the pan with your liquid substitute.
  3. Step: Layer the vegetables, garlic, browned beef, and potatoes into your slow cooker.
  4. Step: Pour the crushed tomatoes and beef broth over everything.
  5. Step: Season the stew generously with bay leaves, thyme, rosemary, smoked paprika, salt, and pepper, then give it a gentle stir to combine.
  6. Step: Cook on LOW for 6-8 hours or HIGH for 3-4 hours until the beef is incredibly tender and vegetables are soft.
  7. Step: Thicken the stew, if desired, by whisking in a cornstarch slurry during the last few minutes of cooking until it reaches your preferred consistency.
  8. Step: Remove the bay leaves, taste for seasoning, stir in half the fresh parsley, and serve hot, garnished with the remaining parsley.

Notes

Optional: Add a pinch of red pepper flakes for a touch of warmth.
