  • ¼ cup (50 g) granulated sugar
  • 1 large egg yolk
  • ½ teaspoon (2.5 mL) vanilla extract
  • ¾ teaspoon (2 g) ground cardamom
  • For Garnish:
  • 1 teaspoon (5 g) powdered sugar
  • ¼ teaspoon (remaining) ground cardamom

Instructions

  1. Preheat Oven and Prep Pan: Preheat the oven to 400°F (200°C) and line a 12-cup muffin tin with paper liners to create a high dome.
  2. Prepare Cream Cheese Ribbon Mixture: In a small bowl, combine the softened cream cheese, granulated sugar, egg yolk, vanilla extract, and ¾ teaspoon of cardamom. Whisk until completely smooth and free of lumps, then set aside.
  3. Combine Muffin Batter Ingredients: In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt. In a separate medium bowl, combine the room-temperature egg, milk, cooled melted butter, and vanilla extract.
  4. Mix Batter and Fill Liners: Pour the wet ingredients into the dry ingredients and gently fold together until just combined. Avoid overmixing. Spoon two-thirds of the batter into the prepared liners, then add dollops of the cream cheese mixture on top. Finish by adding the remaining batter over the filling.
