This homemade miso sauce is a versatile savory amber glaze perfect for elevating weeknight dinners. It’s quick to prepare, healthy, and offers a customizable flavor profile for various meals.
Ingredients
- 0.25 cup white miso paste
- 0.25 cup low-sodium soy sauce
- 2 tablespoons mirin
- 1 tablespoon rice vinegar
- 1 tablespoon grated fresh ginger, (approx. 1-inch piece)
- 2 cloves minced garlic
- 1 teaspoon toasted sesame oil
- 0.25 teaspoon red pepper flakes
Instructions
- Combine & Simmer: In a small 1-quart saucepan, combine soy sauce, mirin, rice vinegar, ginger, and garlic. Bring to a gentle simmer over medium heat, stirring often.
- Reduce Slightly: Continue simmering for 5 minutes, stirring, until the sauce base visibly thickens and lightly coats a spoon.
- Whisk In Miso (Off Heat): Remove from heat immediately. Whisk in white miso until smooth, creating a glossy miso sauce. (If too thick, whisk in 1-2 Tbsp vegetable broth.)
- Finish & Serve: If using, stir in toasted sesame oil and red pepper flakes. Your fresh miso sauce is ready to elevate any dish.
Notes
To avoid dulling flavor and enzymes, never boil miso paste. For a lower-sugar savory amber glaze, reduce mirin by half. Low-sodium tamari can be used as a gluten-free substitute for soy sauce, and maple syrup or honey can substitute mirin. Store sauce in the refrigerator for up to a week.
