Ingredients
- 4 salmon fillets, 180 g (6 oz) each
- 80 g (0.33 cup) white miso paste
- 60 ml (0.25 cup) alcohol-free mirin-style seasoning
- 60 ml (0.25 cup) pure maple syrup
- 30 ml (2 tablespoons) tamari
- 30 g (2 tablespoons) granulated sugar
- 15 g (3–4 cloves) black garlic, finely minced
- 15 g (1-inch piece) fresh ginger, grated
- 15 ml (1 tablespoon) vegetable oil
- 5 g (2 tablespoons) fresh chives, thinly sliced
Instructions
- Prepare Marinade: Whisk white miso paste, alcohol-free mirin-style seasoning, pure maple syrup, tamari, granulated sugar, finely minced black garlic, and grated fresh ginger until thoroughly combined and smooth.
- Marinate Salmon: Place salmon fillets in a shallow dish or resealable bag. Pour 160 ml (2/3 cup) of the marinade over, ensuring all sides are coated. Reserve the remaining 40 ml for the finishing glaze. Refrigerate for at least 4 hours, or preferably overnight, allowing deep flavors to penetrate.
- Preheat Oven and Prep Pan: When ready to cook, preheat your oven broiler to high (or oven to 200°C / 400°F if baking). Line a sturdy baking sheet with parchment paper or foil and lightly brush with vegetable oil.
- Cook the Salmon: Remove salmon from marinade, letting any excess drip off. Place fillets skin-side down on the prepared baking sheet. Broil the salmon for 8-12 minutes (or bake for 12-18 minutes at 200°C / 400°F) until cooked through and flaky. If the glaze starts to char too quickly, lower the oven rack slightly to prevent burning.
- Prepare Finishing Glaze: While the salmon cooks, gently heat the reserved 40 ml of fresh marinade in a small saucepan over low heat. Simmer for 2-3 minutes, stirring constantly, until it slightly thickens into a glossy, pourable glaze.
- Serve and Garnish: Carefully transfer the cooked salmon fillets to individual plates. Drizzle the warm, glossy Black Garlic-Maple Miso Glaze over each fillet. Garnish immediately with the thinly sliced fresh chives.
Notes
For a quicker weeknight option, use an air fryer at 375°F for 8-12 minutes. You can also lower the oven rack if the glaze chars too quickly. Store leftovers in an airtight container in the refrigerator for up to 3 days.
