  • 1 cup pasta water, reserved

Instructions

  1. Cook Pasta: Bring salted water to a rolling boil in a large pot; visibly bubbling. Add pasta; cook until al dente, tender with a slight bite, about 10-12 minutes. Reserve 1 cup (240ml) starchy pasta water before draining.
  2. Melt Butter & Saute Garlic: In a 10-inch skillet, melt butter over medium heat until it shimmers. Add minced garlic; cook until fragrant and lightly golden, about 1 minute.
  3. Create Miso Sauce: Whisk in miso paste and 0.5 cup (120ml) reserved pasta water until smooth. Cook gently, stirring until warmed, showing a creamy sheen, about 3 minutes. (If sauce looks dry, splash in 1–2 tbsp pasta water.)
  4. Combine & Finish: Add drained pasta to the skillet. Toss with miso sauce until evenly coated. Stir in grated Parmesan. Add more pasta water gradually until the sauce beautifully coats the noodles with luscious texture.

Notes

Consider whole-grain pasta for fiber, low-sodium miso for dietary control, or gluten-free pasta for sensitive eaters.
