Ingredients

- Pie crust or puff pastry, enough for 12 mini pies

Instructions
- Preheat the Oven: Preheat your oven to 425°F to ensure golden, bakery-style crusts.
- Make the Filling: In a bowl, toss diced apples with brown sugar, cinnamon, nutmeg, clove, optional allspice, lemon juice, and cornstarch.
- Prepare the Dough: Roll out pie crust to 1/8–1/4 inch thickness and cut into 4-inch rounds. Chill for 10 minutes if needed.
- Assemble the Pies: Press dough circles into muffin cups or place flat on a baking sheet. Fill each with 1 heaping tablespoon of apple mixture.
- Seal the Pies: Add a top crust or lattice, crimp edges with a fork, and cut 2–3 steam vents in each pie.
- Apply Egg Wash: Whisk egg with water and brush over the tops for a golden finish.
- Bake: Bake for 18–20 minutes until golden. Let cool in the pan for 5 minutes before transferring to a wire rack.
